The reason for the quiet blog

 
Baby #5 is on its way in early October!  I have been feeling terrible, so things have been quiet here, and I am sure that the Lord has chosen this nausea for me as my Lenten Penance (so there's hope that I may feel better by Easter??).  The kids are thrilled, and we are praying for a healthy baby (but Emma is praying for a healthy GIRL ;). 
I would appreciate some extra prayers for me and this little one, as pregnancies are not easy for me.  Thank you!

Roasted Corn and Black Bean Salsa

As promised, I wanted to share this DELICIOUS recipe, that is not just for chips.  It's so wonderful!  I don't know where this came from, but it has gone around our school.


Roasted Corn and Black Bean Salsa
16 oz. White Shoepeg Corn, Thawed
3 tbl. Olive oil
 
Roast for 18-22 min. @ 450, stirring often

1 tbl. Salt
¾ tsp. Cumin
5 tbl. Olive oil
2 tbl. cider vinegar
6 tbl. Fresh lime juice
Combine and set aside

1 cup cilantro, chopped
½ cup red onion, chopped
1 red pepper, chopped
2 tsp. minced garlic
2 15 oz. cans black beans, drained and rinsed
3-5 plum tomatoes, chopped
2 jalapenos, minced
2-3 avocadoes, chopped

Mix together, add cooled corn and dressing Chill about 6 hours before serving.

Basketball days

Did I mention that Emma has been playing basketball with the CYO?  She is on a little team, with 3 very big coaches, including Tommy.  Her team was a sweet group of girls, and some really just learning.  By the end, though, the kids knew a lot.  Their coach is a high school coach at our local Catholic High School (to be honest, he coached my sisters and I when we were there). 
 



The toughest part is that because the girls were in 3rd grade, they goals had to be lowered, and there was only one school that had 8 feet baskets, and it was about 45 minutes away.  It wasn't too bad, except that there is only about a foot and a half all the way around the court.

Blue and Gold Banquet for the scouts was this past weekend, and each den prepares their own pot luck.  This recipe?  Oh my.  A friend from school gave it to me and it is amazing.  I will have to post this one soon, but I just think the colors are so beautiful.  God is amazing with all his colors in nature!

 Our amazing pack had some great games for the scouts to be involved in, and each one was so much fun.

 It was a noisy time, but a blast for the kids.

 These boys are so grown up!  We are so excited that Patrick will have a buddy in the troop.
