Answer Me This: Baked Chicken, and Don't Be Offended if I Don't Hug You, Please.

Joining Kendra for the virtual cocktail party, since that is the only kind I can attend without feeling like everyone will judge me for even sipping a cocktail.

1. What’s your favorite thing on YouTube?

YouTube can be fun, addicting, and downright frustrating.  I only feel that I can put YouTube on my computer or cell phone things that my kids can watch.  Now, I don't put those people that play video games and take a video of themselves, which my kids could watch all day, but I do enjoy the Bored Shorts TV.  The kid history was the first one I was introduced to and the kids giggled the whole time.




2. Who taught you to drive?

There are 7 children in my family.  I am number 6.  By the time it was my turn to learn, my mom (a very nervous Nellie) washed her hands of that position and did not try to help me.  To be honest, I don't remember EVER driving with my mom or dad in the car while I was learning.  I drove with the driving instructor just a few times, and was so nervous.  I was the only one at home and I needed to be able to get around so it was kind of a necessity.  My sister took me out a few times, if I recall correctly. 

So, now that I think about it, did anyone really teach me to drive??  Maybe my husband's been right all these years.  Huh.

3. What’s your favorite thing to cook?

This is hard for me to answer.  I am happy to cook, but what I enjoy eating and what I like to cook are a little different.  I think I get more satisfaction when I cook dinner.  Appetizers are a little more frustrating because it seems like lots more cutting and preparation.

The easiest meal of all is one that brings me back to childhood days when my mom would cook is a chicken meal.  Whole chicken.  The chicken gets a super generous sprinkling of Lawry's seasoned salt and wrapped in aluminum foil.  Put it the oven for about 1 1/2-2 hours and it comes out moist and yummy, with lots of gravy (or au jus, I think they call it).  Serve with some rice and it's so yummy. 

 
4. Are you a hugger or a non-hugger? Why?

I dreaded this question most of all.  I am not exactly sure when I stopped being a hugger, but perhaps it had to do with all the strangers and people who are not family wanting to hug, and the face that I get very self-conscious and nervous when it's time to hug.  All events seem to have hugs involved, and I start to get nervous when it's time to leave.  I am a bit embarrassed to admit this, but some days I find myself creeping away so I don't have even think about the possibility of the hugs. 

As a mom of young kids, I feel like this is the most awful thing I can admit.  I like to think that it's different with my kids, but maybe you should be a fly on the wall to help me decide.

5. Where do you pray best?

In the chapel, without my kids.  In moments of gratitude, as I am moving and doing.  I am not sure where it is I pray best, as I don't think I do it very well at all.

6. When is the last time you saw/spoke to your grandparents?

All of my grandparents are deceased, and some of them I never knew at all.  I am not a good one with dates, though I can place their deaths with some events in my life, so I am not sure of the last time I was able to be with them.

My Mom's mom was married 3 times.  I never met the first 2, and was present for the 3rd wedding.  She was a Louisiana lady and kept her little accents in certain words that she said. She was local for most of my life, and in my homeschool days we would visit her almost every day - meet at daily Mass, go to breakfast or just visit at her home.  She met my 2 oldest children and one of my favorite memories was to bring them to see her.  I have been missing her lately, so this question comes at a poignant time.

My Dad's parents lived in Texas, and, like my other grandma, I didn't really know my Grandfather.  They were both New Yorkers (I think) in their growing up, so the things I remember about them were the loud voices.  She called my Dad "Bobby" with a big New York accent, which was so cute to me.  I was a newlywed when she died and remember going to the funeral with Tommy.


*Sorry, dear patient readers.  I had no idea that this week was going to get so serious.  On a much lighter note, Tommy and Patrick made it back from camping all in one piece, and no crazy things happened at home!  James has been attached to Tommy at every  opportunity.  He cannot get enough hugs, snuggles or rides with Daddy in his car to fill him up.  It is absolutely adorable.  I don't know what he will do when he realizes that Tommy has to go to work in the morning!*

Roasted Corn and Black Bean Salsa

As promised, I wanted to share this DELICIOUS recipe, that is not just for chips.  It's so wonderful!  I don't know where this came from, but it has gone around our school.


Roasted Corn and Black Bean Salsa
16 oz. White Shoepeg Corn, Thawed
3 tbl. Olive oil
 
Roast for 18-22 min. @ 450, stirring often

1 tbl. Salt
¾ tsp. Cumin
5 tbl. Olive oil
2 tbl. cider vinegar
6 tbl. Fresh lime juice
Combine and set aside

1 cup cilantro, chopped
½ cup red onion, chopped
1 red pepper, chopped
2 tsp. minced garlic
2 15 oz. cans black beans, drained and rinsed
3-5 plum tomatoes, chopped
2 jalapenos, minced
2-3 avocadoes, chopped

Mix together, add cooled corn and dressing Chill about 6 hours before serving.

Cookie Time!

Emma was just amazing this year with our Speculaas cookies. Such a great helper, and did not tire of doing the cutting and rolling.

We were joined by "Aunt Nichole" and her neice, and the two girls were peas in a pod. They were so cute with the flour everywhere. Don't you just love Emma's outfit?

Their favorite part was the flour containers.




I love this time for the cookies. It is so special to me to have this tradition with my kids.

Kids and veggies

I sent Tommy to the store the other day, and on the list was frozen veggies. He came home with veggies all in the Steam Fresh bags. I have to admit, I was a bit frustrated, because the bags are smaller, and it seems like we buy so much more. I usually just pick up the store brand BIG bags, and do a few batches of those. But, we have them, and I decided to use them. The first night I made broccoli. My kids aren't big fans of veggies (even when I douse them with salt and butter. I know. They are weird.) but I noticed that they were eating the broccoli. And eating it with gusto. Tommy started making those "What about Bob?" noises, and I decided I should see what the fuss was.

Oh my.

It is broccoli, mind you, but it was so fresh tasting, with a little bite, and really good. Best I have ever had. I thought it was maybe a one time thing, so I made the peas next. OH MY. Even better. The kids? Ate it all up AGAIN. Those bags? Let me just say they are my new best friends! I don't know what I have been doing to my veggies all this time, but it was all wrong. They make them just right.

Two words: Bacon Grease

Oh man. I found another salad recipe that I made for this past weekend. Talk about yummy! I don't think I was the only one who enjoyed the salad, but I also think that I may not have made enough food for everyone that came over.....I had to order pizza for dinner! Ack. I felt like a failure. We had such a big family, and I just wasn't thinking about 2 meals. When Tommy said he wanted to grill, I kindly suggested that I make a ham. He insisted-er, suggested that "it will be fine." Well, I should have just made this ham from Joy of Cooking (scroll down), and I would have felt better. But, I didn't listen to my angel, so I had to order pizza (hangs head in shame). Still, I am probably the only one who noticed and even if I wasn't, Tommy's family is so nice that they wouldn't have said anything anyways!

Anyhow, back to that salad.

Wilted Spinach Salad with Candied Pepper Bacon

Bacon and Salad
4 slices thick cut bacon
1 tbsp packed brown sugar
1/2 tsp coarsely ground black pepper
1 package fresh baby spinach
1 medium Granny Smith apple, cored and sliced into thin wedges
1/4 cup thinly sliced red onion wedges
Salt and pepper
2 hard cooked eggs, peeled and cut into wedges

Dressing
1 tbsp reserved drippings from bacon (aka BACON GREASE)
2 tbsp brown sugar
1 1/2 tbsp apple cider vinegar
2 tsp Dijon Mustard

1. Line bacon on parchment paper on a microwave safe plate, sprinkle with brown sugar and pepper. Cook in microwave for 3-5 minutes, or until crispy. Drain on paper towel and reserve that BACON GREASE. Cut into 1/2 inch pieces. Set aside.
2. Combine spinach, apple, onion in a large bowl. For dressing, whisk bacon drippings (GREASE), brown sugar, apple cider vinegar, and mustard in a microwave safe bowl. Cover, microwave on high 2 minutes or until bubbly. Pour dressing over salad to serve, and toss gently. Season with salt and pepper. Top with egg wedges and bacon. Serve immediately.

Serves: 4 (obviously I made more than this for the army, I mean family that came over. ;)

Tommy's Favorite

Father's Day is on Sunday and I wanted to post one of Tommy's all-time favorite recipes. I have his gift all ready to go (yay me!) and I am looking forward to sharing that with you all. I hope he likes it!

Blackened Fish Tacos:
Slaw:
¼ cup sliced green onions with tops
2 tbsp snipped fresh cilantro
1 tbsp fresh lime juice
1 tbsp vegetable oil
1 garlic clove, pressed
1 tsp sugar
½ tsp Cajun or blackened fish seasoning
2 cups broccoli slaw mix
Fish:
1 lb tilapia (or catfish) fish fillets
1 tbsp Cajun or blackened seasoning
1 avocado, seeded and sliced
8 (6-inch) corn tortillas, warmed (I use flour, for taste and warm in the microwave)
3 medium radishes (I don't usually do)
Additional cilantro (optional)

1. For slaw, in a small bowl, combine green onions, cilantro, lime juice, oil, garlic, sugar and seasoning; whisk until blended. Add slaw, toss to coat. Refrigerate until ready to serve.
2. Heat Grill Pan over med heat. Moisten fillets with water and sprinkle with seasoning. Lightly spray oil on the pan. Cook fillets until fish flakes easily with fork (10-12 minutes). Remove from heat.
3. Cut avocado into slices lengthwise. Warm tortillas. Top with slaw mixture, avocado, fish and grate radishes over fish. Top with additional cilantro, if desired.
